Is he teething?

I don't know that much about GSDs or Aussies, but with Chinese Cresteds, it's fairly common for the ears to become floppy around teething. What most people do if they're serious about it is tape the ears again for a few weeks, and maybe add a bit of extra calcium to the diet.

My petsitter plays with the dog and the two cats when she arrives--and then walks the dog for 2-30 minutes. When she leaves, Addy is ready to sack out after her walk, not revved up after the group playtime.

You need a different dog walker.
