First up, this is what a whole one looks like, they're massive

It tends to be reasonably priced (about £2.50/Kg in the UK) as we don't eat much of this stuff any more, our butcher gets them in for us when we ask him. It's both organ meat and muscle meat so it's very versatile. If you feed chicken carcasses and want to add some meat to the more boney ones this is a great meat to do it with.
The first thing I do is trim off a lot of the fat as it would upset Ted's stomach. So depending on whether you're watching your dogs weight or if it doesn't do well on fat get rid of it.
As Ted is fed raw I then butcher up a fair portion of it into Ted sized meals and freeze them, Ted eats them either defrosted, or more typically in order to slow him down (as he loves the stuff

I then make chews and treats with the rest. If you have a dehydrator you can use that but if not kitchen paper on a wire rack in a reasonably warm airy space works well. I find I need to change the paper frequently in the first day or two to stop it sticking then it tends to be ok. It seems to take around 4 to 5 days to completely dry out and then I freeze some and pop some in the fridge for the treat bag/as chews.
For the treats I cut about an inch square and they seem to dry down to about a cm square
